Aymé Vadim, based in the Côte de Nuits, has quietly achieved near-mythical status among collectors, largely due to the extreme rarity of his wines.
Production is exceptionally limited: around 2,500 bottles per year across 8–9 wines, equating to roughly 300 bottles per cuvée.
With a PhD in molecular biology and a career spanning Harvard, the Max Planck Institute, and the Pentagon, Vadim took an unconventional path into winemaking, starting anew in Beaune. His philosophy is uncompromising: exclusively Premier and Grand Cru sites, spontaneous fermentation, no fining or filtration, and minimal sulfur. The result is wines of striking precision, purity, and transparency.
Each cuvée is sourced from a single barrel and hand-bottled directly from cask, making every release a unique, non-replicable expression.
Highly restricted
The current release, 2017, was bottled only in 2024 after an extraordinary seven years of élevage on lees—an approach virtually unheard of in Burgundy. A minute quantity of 2016, drawn from Vadim’s private library, is also available, offering greater structure and long-term aging potential.
Produced exclusively from Pinot Noir, primarily in Gevrey-Chambertin and surrounding Premier and Grand Crus, quantities are exceptionally limited.
