BURGUNDY AND ITS VARIETALS
Founded in 2010, Chantereves embodies elegance and purity in the heart of Burgundy, operating both as Récoltants-Manipulants and as a micro-négoce.
With experiences gained in prestigious European wineries, Tomoko and Guillaume created a project that fuses tradition with a contemporary vision.
In 2020, they acquired 4.7 hectares of vineyards in the Hautes Côtes de Beaune, spread across Savigny-lès-Beaune, Chorey-lès-Beaune, and Fussey, which are cultivated organically and biodynamically. Their philosophy? The utmost respect for the terroir, with minimal intervention in the cellar.
THE WINES
The whites ferment spontaneously with indigenous yeasts and age for 12 months in used oak barrels (228–600L), before resting in steel without fining or filtration. Sulfur is added only at the final stages, and in minimal quantities. The result? Bright, fresh, and vibrant wines.
The reds ferment as whole clusters in open wooden vats, with no destemming and no aggressive punch-down, only gentle manual pump-overs to preserve elegance and finesse. After one year of aging in used oak barrels, they rest on fine lees in steel before being bottled unfined and unfiltered.
