Chablis Montserre 2022

This Chablis comes from the Montserre parcel, named after the “Serres,” a geological formation of dense overlapping limestone slabs. The surface is scattered with white pebbles. Situated at high altitude, at the very top of the appellation, Montserre is exposed to winds from all four sides. It is bordered by a hedgerow where birds nest, creating a rich and diverse ecosystem.
The wines from Montserre are intense, dry, powerful, and express the raw strength of nature. Fermentation takes place with indigenous yeasts, and aging lasts around 14–16 months in oak barrels on fine lees, with no added sulfites.
Chablis Côte aux Prêtres 2022

As its name suggests, this Chablis comes from parcels located on the “Hill of the Priests”, the highest point of Béru. The soils are limestone, composed of small pebbles eroded from the Kimmeridgian. Grapes are harvested by hand, and once in the cellar, the must ferments with indigenous yeasts.
The wine undergoes 100% malolactic fermentation, followed by around 18 months of aging, 80% in used oak barrels and 20% in stainless steel tanks. Bottling is carried out without sulfites, fining, or filtration.
