ORGANIC PRINCIPLES

Founded in 1928, Cavallotto winery is located at the top of the Castiglione Falletto hill, specifically where the prestigious Bricco Boschis and Vignolo crus are found.

With 25 hectares of vineyards cultivated according to organic principles, the winery produces around 100,000 bottles per year. The main grape varieties include Nebbiolo, Barbera, Freisa, and Grignolino, along with small but refined productions of Chardonnay and Pinot Noir.

Their wines

In the cellar, fermentation takes place using indigenous yeasts and sulfite use is limited to under 50 mg/l, ensuring wines that are both natural and authentic. Tradition drives every aspect of the production process, and Cavallotto wines are known for their youthful austerity,but with time, they reveal extraordinary depth and longevity, becoming true collector’s wines.
