Founded in 2017 in historic Alsace, Soil Therapy is a micro-négoce working 4 hectares biodynamically, with a vital and respectful approach that puts soil health and vineyard expression at the very center.
Fermentations are spontaneous with indigenous yeasts, sulfur use is minimal, and every choice in the cellar aims to preserve fruit purity. After fermentation, wines rest on fine lees to enhance complexity and identity. Grapes include Riesling, Sylvaner, and Pinot Gris, interpreted with a light touch and contemporary spirit. The result is a vibrant, fresh, and precise range, uniting spontaneity and elegance, with small parcels, manual work, and wines marked by energy, balance, and mineral tension.

La Geste 2023

A carefully crafted blend of Sylvaner (40%), Pinot Blanc (40%), Auxerrois (10%), and Pinot Gris (10%), vinified and aged for 9 months (75% stainless steel, 25% oak barrels). Displays ripe fruit character enhanced by lees aging. Fresh and structured, with delicate apple and pear skin notes, lifted by lively citrus tones. Dry and pure, with precise concentration balanced by subtle minerality.
Rittersberg 2021

From a tiny 0.5-hectare biodynamic vineyard in Bas-Rhin, co-planted and co-harvested 60% Pinot Blanc, 40% Pinot Gris. Vines over 40 years old on granitic soils rich in silt and sand, next to the protected Rittersberg biotope. Brief skin maceration before gentle pressing, aged in used French oak barrels. Mineral finesse and subtle salinity, with aromas of flint, white peach, and delicate flowers. Structured, mineral palate with hints of honeycomb and herbs.
Sylvaner Mittelbourg 2023

From calcareous Oligocene slopes at 350m altitude, harvested by hand and vinified with minimal intervention. Aged for 18 months, developing depth and clarity. Opens with orchard fruit, crisp apple, pear, citrus zest, interwoven with saline nuances from limestone soils. Elegant, complex texture with a fresh, long finish.
Only 1,300 bottles produced.
Riesling Schieferberg 2021

From the rare blue slate terroir of Alsace’s highlands, “La Collina delle Ardesie” (The Slate Hill) at 400–450m altitude. Hand-harvested, with 48-hour maceration before slow pressing. Spontaneous fermentation with indigenous yeasts, aged 18 months on lees in 5–6 year old barrels. Pure, crystalline Riesling with intense minerality, layered citrus, herbal notes, and a long, saline, slightly smoky finish.
