A gastronomic experience of excellence by the lake, where Brazilian haute cuisine meets artisanal Burgundy wines. On October 8, 2025, the prestigious S.Pellegrino Sapori Ticino festival arrives at Ristorante La Baia in Locarno, promising one of the most fascinating evenings of the year for wine and fine-dining enthusiasts.

The evening’s stars: Chef Ivan Ralston of Tuju in São Paulo (2 Michelin stars + 1 Green Star), one of the leading voices of contemporary Brazilian cuisine, together with the wines of Domaine de Puy de l’Ours, presented by Chronos Wine Cellar, the official wine partner of the event.
A food and wine festival that has been celebrating Ticino for 20 years
Since 2007, Sapori Ticino has been one of the most important food and wine events in Switzerland and Europe. Founded by Dany Stauffacher, the festival has transformed Ticino into an international gourmet destination, hosting some of the world’s most celebrated chefs.
Among the illustrious names who have cooked in Ticino thanks to this project are Massimo Bottura, Joan Roca, Pascal Barbot, Mauro Colagreco, Mauro Uliassi, Andreas Caminada, Niko Romito, Ana Roš, Antonino Cannavacciuolo, Moreno Cedroni, Enrico Cerea, Franck Giovannini, Eric Pras, and many more.
A project of this caliber is made possible thanks also to the support of prestigious sponsors such as title partner Acqua Panna – S.Pellegrino, UBS, Porsche, and other brands that share the cultural values and vision of the event.
Ivan Ralston: the modern soul of Brazilian gastronomy
Special guest on October 8, Chef Ivan Ralston leads Tuju Restaurant in São Paulo, one of the most representative kitchens of contemporary Brazil. His cuisine is a journey through Amazonian ingredients, fermentations, innovative techniques, and deep cultural roots.

Respectful of the land yet forward-looking, his cooking embodies an authentic, creative, and surprising vision of Brazil. This is a unique opportunity to experience a Brazilian gourmet dinner in Switzerland, signed by one of the country’s most acclaimed chefs.

Artisanal Burgundy wines with Domaine de Puy de l’Ours
As official wine partner of the evening, Chronos Wine Cellar will present a selection of wines from Domaine de Puy de l’Ours, one of the most exciting projects in today’s Burgundy.

Founded in 2020 in Savigny-lès-Beaune by Jean Orsoni and Juliette Puyperoux, the domaine covers about seven hectares and is farmed with artisanal precision. Production is deliberately limited: only six cuvées, both red and white, including a distinctive blanc de noirs, all vinified to highlight the singular character of each cru.
The domaine’s philosophy is clear: wines that are precise, elegant, and true to their terroir, real gastronomic wines, perfectly suited to pair with the creative and complex cuisine of Chef Ralston.
Jean Orsoni himself will attend the evening, ready to share first-hand the story of his vineyards, his winemaking, and the journey that brought him to the heart of the Côte de Beaune.
A night of taste on Lake Maggiore
The elegant and intimate setting of Ristorante La Baia, overlooking Lake Maggiore, will provide the perfect backdrop for an evening that unites two worlds that seem far apart yet complement one another beautifully: the vibrant creativity of Brazil and the elegance of Burgundy.
Whether you’re a seasoned palate or simply curious, whether you’re chasing the perfect pairing or the story behind every dish, this is an evening to experience.
