An Evening of Excellence: CP Bistrot Hosts Le Guaite di Noemi

On September 25th, CP Bistrot in Taverne hosted an evening dedicated to the wines of Le Guaite di Noemi, a dinner that brought together food and wine in perfect harmony.

Guests were welcomed by chefs Jean Pierre and Andrea, who curated every detail of the menu, alongside sommelier Alessandro, responsible for the wine selection and the insightful explanations that accompanied each course.

The atmosphere was warm and relaxed, glasses ready for a journey through the most authentic shades of Valpolicella, told through the wines of Noemi Pizzighella, the young and passionate winemaker leading her family estate in Mezzane di Sopra. Her presence made the evening even more special, as she shared personal stories and reflections that captivated everyone around the table.

A Sparkling Beginning

The evening opened with the Durello Metodo Classico “Diverso”, a fine and elegant sparkling wine that Noemi strongly wanted to produce, reinterpreting this little-known grape in her own distinctive way.

Served as an aperitif, or for those who preferred, paired with the welcome bite, the Durello offered a fresh, mineral sip, the perfect start to the night.

The Depth of Valpolicella

The first course, roasted bone marrow with flambéed beef carpaccio and black truffle, marked the transition into the heart of Valpolicella.

The Valpolicella Superiore 2013 displayed remarkable finesse, followed by the Ripasso 2012, richer and more structured, perfectly complementing the handmade maccheroncini with slow-cooked Hammer Steak ragù.

Two different wines, yet deeply connected, one defined by elegance, the other by strength, both revealing the dual soul of Valpolicella: freshness and intensity, lightness and depth.

Among the region’s most iconic expressions, Ripasso and Amarone reflect a winemaking philosophy where time plays a central role. In Noemi’s wines, time becomes an ingredient of balance and transparency: never excess, only pure, honest expression.

Time and Patience

The grand finale starred the Amarone della Valpolicella 2012, served alongside a duo of ribeye steaks: the tenderness of Finnish Sashi and the persistence of Hereford.

A pairing that showcased perfect harmony: the richness of the dish mirrored by the depth of the Amarone, a wine that embodies the patience and vision of the winery.

Every sip revealed Noemi’s choices: strict selection, long waiting, no shortcuts. The Amarone is the purest expression of her philosophy: respect for the raw material and full trust in the natural rhythm of time.

Noemi Pizzighella

The true protagonist of the evening, Noemi Pizzighella represents a new generation of Italian winemakers who blend strong roots with an independent spirit.

Raised among the vines, she learned from iconic figures such as Romano Dal Forno, yet forged her own identity and voice. Her wines reflect her character: authentic, determined, and full of life.

Le Guaite di Noemi remains a small family-run estate, producing limited quantities with uncompromising quality. Each bottle is the result of meticulous work, always guided by a single idea: to make wines that speak honestly of the land they come from.

The dinner at CP Bistrot was more than just a pairing of food and wine, it was a celebration of authenticity.
